Purpose of Role

The Chinese Executive Chef, YEN is responsible for :

Maintain food quality and productionstandard.

Train, motivate and supervise the kitchenbrigade.

Control food costs and coordinate foodservice operation in accordance with


To achieving the above, liaise with SousChefs and Venue Managers closely.

Implement quality control and portion controlmeasures, as well as wastage


Control food cost through accurate foodrequisition.

Implement manning planning and control tominimize labor cost.

Maintain a good relationship with all sectionSous Chefs and be able to adapt

to changing market needs.

Stay informed of new cooking trends, methods,products and developments

by visiting other comparable restaurants and hotels;and reading relevant

literatures when available.

Responsibly Description

Maintain kitchen hygiene and safe food storage / rotation.

Coordinate of all aspects of the division’s operation to ensurethat the

services Culinary delivered to external and internal guests exceedguest

expectations and are in accordance with W’s standards and procedures.

Responsible for daily management of CulinaryTalent.

Align management style,work practices and conduct with W Taipei’s Vision,

Values and policies.And comply with Marriott InternationalBusiness Code

of Conduct at all times.

Analyze and respond to information on guestfeedbacks and guest and Talent

satisfaction; and give positive commitment tocontinuously improve of

product and performance.

Monitor all kitchen equipment to ensure safeand functional operation; and

report issues to Engineering.

Complete daily stores requisitions.

Liaise with other chefs to streamlineoperations.

Supervise daily foodpreparation and service requirement.
